ZucchiniBring a large saucepan of water to the boil while you make the sauce. Heat the olive oil in a large frying pan over medium high heat, add shallot and fry gently for a minute. Add zucchine cut into cubes and salt, cook for 5 minutes . Add some water and bring to a simmer. Cook for 8 minutes until the liquid has been reduced. |

prawnsMeanwhile place the clean prawns in a oiled pan, cook for 5 minutes. Add chilly and fade with white wine. when they are closed to be ready season with salt. |

SpaghettiAdd spaghetti to the boiling water for 8 minutes. Drain , reserving some cooking water. Add spaghetti to the zucchini sauce with cooking water if it is too dry,and cook for 1 minute. Add half prawns and toss to combine. Finish with pistachio grain and the other prawns. |
