The Semola Crackers are perfect for the appetizers with salame, prosciutto crudo, smash avocado. I love to include these crackers in my children’s lunchboxes, because for them I prefer fresh and homemade food without preservatives.

Making dough

Place flour, semola and salt in a bowl, mix all the dry ingredients. Gradually add olive oil and water and mix until a dough forms. Pour the dough in a floured bench and knead it for 5 minutes. Wrap it in a plastic film. Rest at room temperature for 20 minutes.

Making crackers

Preheat your oven to 200 and line a baking two baking trays with baking paper.
Place the crackers's dough into floured surface and cut it in two big pieces. With a wood rolling pin, roll the dough out to 3 mm. Cut out a rectangles 3 x 8 using a cutter. Place them on the prepared trays. Make little holes with a fork. Brush the top of the crackers with olive oil and sprinkle with salt. Bake for 15 minutes or until golden.
