Making dough

Oil a bowl . In an another bowl put the flour and salt. In a small bowl dissolve the yeast with some water of 380 ml. Pour the solution of water and yeast into flour and mix. Add the remaining water and mix again. Transfer to a lightly floured surface and knead for 10 minutes until smooth and elastic. Place back in the oil bowl, cover with a ciling wrap and leave to rise for 12 hours.

Second leavening

Transfer the dough to lightly floured surface, stretch it with hands and fold in two. Return the dough to the bowl and cover with a clean damp tea towel. Leave it in a warm place for two hours.

Time to cook

Put the casserole dish in the preheated oven to 250 for 20 minutes , before the end of the two hours of leavening. Take out the casserole dish from the oven and cover the it with baking paper. Put the dough in the casserole cover and bake for 30 minutes. After bake for another 30 minute without the lid.
