2 spoons Parmigiano Reggiano
a pinch nutmeg
1/2 grated garlic
60 gr plain flour
sauce
100 gr salted butter
5 leaves sage

A typical tuscan plate, Gnudi are a kind of gnocchi made with ricotta cheese , spinach and parmigiano. Gnudi means naked because they  are made with the same filling of ravioli without pasta, with out skin…. for this naked!

Make gnudi

Boil the spinach and chop them in very little pieces. Place ricotta in a bowl and add spinach , grated garlic, parmigiano, flour and nutmeg if you like, mix everything until well combined. After pour the Gnudi dough into a wood bench and start to make a little ball.

Make sauce and eat!

Cook Gnudi in plenty of boiling salted water . When the Gnudi swim up to the surface of the water they are cooked. Scoop them out with the slotted spoon and put into the pan with melted butter and sage. Mix well, season to taste and serve Gnudi immediately with a sprinkle of grated Parmigiano.
