1 + 1 yolk eggs
1/2 teaspoon cinnamon
50 g butter
40 g sugar
20 g fresh yeast
80 ml water
j.e. honey
j.e. icing sugar
1 l canola oil (for frying)

In a small bowl dissolve fresh yeast with water.
In a small saucepan melt butter over low heat. Pour melted butter in a bowl with sugar.
Mix well so the sugar melt with warm butter.
Meanwhile pour flour in a bowl for a stand mixer ( with the hook), add egg, yolk and mix.
Add the dissolved yeast into the bowl with butter and sugar, mix. Now pour this mixture into the bowl with flour and eggs.
Mix well until you reach a smooth and homogeneous dough.
Make a ball with your hands and place the dough in a oiled bowl.
Cover with cling wrap. Let it rise for at least 3 hours or until doubled.
Place the dough onto a floured bench and roll it out to create a rectangle from which you will obtain, with a pastry cutter, 20 squares of about 6 cm per side.
In a saucepan bring the oil to 180 degrees. Fry your bigne,
When they are puffy and golden they are ready !
Drain them well with a small colander, let it rest on absorbent paper.
Sprinkle them with icing sugar and honey.... ENJOY!
