200 g almond meal
120 g plain flour
80 g icing sugar
100 g butter
1 + 1 yolk eggs
150/200 g strawberries jam
10 approximately fresh strawberries
3 full spoons almond flakes

Strawberries Galette

It's Spring

When Spring comes, strawberries are the first fruits I think of ….and this Galette with almond meal pastry is simple delicious !

In a big bowl, combine 2 flours, add diced butter and start working with your hands until you get a sand consistency.
Now add sugar, work a little more with your hands, when it is well amalgamate add the eggs. Work the dough well until it is homogeneous. You can also make your shortcrust pastry in a stand mixer.
Then wrap it and put it in the fridge for at least 2 hours (I left it overnight).
Preheat the oven to 180
Roll out your pastry on a piece of baking paper.
Transfer the baking paper on a tray and spread the jam on your pastry for a width of about 20 cm in diameter. Add fresh strawberries, previously cut into cubes. Fold all sides without jam and sprinkle them with almond flakes.
Bake for 35 minutes to 180 degrees.
Let it cool and ENJOY!
