150 ml milk
30 gr butter
35 gr grated parmigiano
pinch salt and pepper
150 gr plain flour
1 bag Pizzaiolo instant yeast
8 cherry tomatoes
12 little cubes mozzarella
12 basil leaves

These Muffins are tasty and soft, perfect in every occasion: lunch, snack, dinner or aperitivo.

You can even add pieces of prosciutto or zucchini… in sort, you can season them as you like!

Preheat the oven to 180, line a tray for 6 muffins.
Beat in bowl the egg, add milk and grated parmisan. Mix well then add melted butter.
Sift yeast with flour. Add the powder ingredients into the bowl with the mixture.
Mix well until well combined. Season with salt and pepper.
Meanwhile, cut cherry tomatoes in half and cook them in a pan with a splash of extra virgin olive oil, for about 3 minutes. Pour cherry tomatoes into the dough, mix with a spatula (leave 6 for garnish).
Put one spoon of dough in each hole. Add 2 cubes of mozzarella and 2 leaves of basil. Cover with another spoon of dough. Garnish each muffins with half tomato.
Bake for 25 minute to 180 degrees.
