200 gr sugar
400 gr self rising flour
300 gr rhubarb
70 gr oats
80 gr almonds
120 ml milk
180 gr butter
1 teaspoon ginger
1 grated lemon

The Princess' Cake

I always thought that rhubarb was a magical ingredient, used by the witches to make magical potions that could transform them into beautiful  princesses.

The ingredient that my grandma used to give me back a smile in my sad days …. this romantic and beautiful cake, coloured pink.

Preheat your oven at 180 degrees . Line with baking paper a round cake tin.
Wash and cut your rhubarb into 2 cm cubes.
Melt the butter in small saucepan over low heat.
Whip the eegs with sugar in a stand mixer, for 8 minutes. Then slowly combine all the powdery ingredients, previously mixed and grated lemon.
Add milk and butter and work for another 2 minutes.
add half rhubarb and half almonds, mix with a spatula.
Pour the dough into the round cake tin. Add the other rhubarb and sprinkle the surface of your cake with almond flakes.
Bake for 50 minutes to 180 degrees.
Leave the cake cool down for 10 minutes into the tin.
Then transfer to a wire rack to cool completely. Dust with icing sugar and serve... enjoy!
