300 gr plain flour 00
1 egg
1 pinch salt
Sauce
80/100 gr salted butter
40/ 50 gr grated parmigiano
pepper
8 fresh sage leaves

Pumpkin Gnocchi is the perfect pasta for Halloween dinner with friends!

Pour on to the bench some flour and your roasted/ smashed pumpkin.
Make a hole where you can pour the egg and salt. Whisk it with a fork. Add flour a bit at time and work the dough with your hands until well combined. Divide your dough into 6 pieces and make 6 snakes 2 cm in diameter. Then cut your gnocchi with a knife. Your bench has to be always floured.
Bring to boil salted water in a saucepan.
Meanwhile melt butter and sage in a pan.
Pour your gnocchi into the boiling water. When they float, drain them with a small colander and pour your gnocchi straight away into the pan with butter and sage.
Mix well adding grated parmigiano and 2 or 3 spoons of leftover cooking water.
Serve hot with a sprinkle of grated parmigiano and pepper.
