100 g milk
100 g canola oil
300 g raw grated pumpkin
300 g flour
1 teaspoon cinnamon
1 bag baking powder (Pane Angeli)

This is not a very sweet cake, you can taste all the pumpkin flavour!… A cake that is always moist inside and served  with a spoon of whipped cream, it is fabulous!

Grate your pumpkin.
Preheat the oven to 180 *
Beat eggs and sugar for 5 minute in a stand mixer, until they become fluffy.
Add milk, oil and grated pumpkin, mix well.
Slowly add flour, previously sifted with baking powder.
Mix well until well combined.
Pour the mixture into a silicone round tin cake. The silicone tin makes your cake more humid even after baking.
Bake it for 40 minutes.
Let cool down your cake and sprinkle with icing sugar.
Serve with a tuft of whipped cream and a warm coffee.
