My kids are big connoiseurs of potato gnocchi and when they tried my new dough they didn’t realise that it was gluten free……

Potatoes

Place potatoes in a medium saucepan and add cold water to cover all. Bring to boil , season with salt and cook until fork-tender, around 25 minutes. Tranfer potatoes to a plate and leave to cool. After peel the potatoes and mash them with a masher. I recommend to prepare the potatoes the day before so they are perfectly dry and cold for the dough.

Pour the mash potatoes on a bench and add 300 gr of rice flour and salt and stir with your hands until combined.Add 2 eggs work it all together, kneading with your hands, until it is homogeneous mixture. Rest the dough for 15 minutes. Cut the dough into 5 - 6 pieces, then roll out on a surface dusted with flour and shape them into 1,5 cm thick logs. Cut each long 1,5 cm pieces. You can gently roll gnocco onto a wooden gnocchi roller, so the ridges will trap the sauce for the joy of yours taste buds!

Hey, I love your post. I recently finished an post on preserving beef. I like to make my own food for New Year!. I will be making a tasty ice cream to go with it. The kids will be at home with me and I am sure they are going to enjoy it.
