3 eggs
120 g sugar
100 g canola oil
90 g greek yogurt
1 grated lemon zest
2 small or 1 big peaches
1 bag baking powder/ Pane angeli
180 g plain flour

One thing I hate is throwing away food… so I often make recipes with what I find in my fridge.

In this case I had some gGreek yogurt that was about to expire and some peaches a little fluffy….. some sugar, eggs, flour, lemon zest and a soft Plumcake for breakfast is ready!

Preheat your oven to 170*
Grease and flour a loaf tin for plumcake.
Cut peaches into slices.
Beat the eggs with sugar for a few minutes, until become fluffy and smooth.
Add canola oil, greek yogurt and grated lemon zest.
Mix again.
Sift baking powder with flour. Pour slowly into the mixture.
Mix well until the dough is smooth.
Pour half dough into the tin cake. Place half peaches on the surface. Add the other half dough and place the others slices of peaches.
Bake for 50 minutes
Let it cool, cut and enjoy!
