They are so cute!

Mini pancakes are perfect finger food … you can season them with smoked salmon and cheese but even with prosciutto crudo and mozzarella, with grilled zucchine and ricotta cheese … how you prefer!

 

 

They are perfect for aperitif or antipasto …. even for a picnic!

Everyone will be happy with these delicious salty mini pancakes!

Beat eggs in a bowl, then add milk, flour, yeast, salt and pepper.
With a whisk beat all the ingredients until a homogeneous mixture without lumps is obtained.
Heat a pan, previously rubbed with a napkin soaked in oil.
When the pan will be hot you can start to cook your mini pancakes (4/5 cm in diameter), about 1 minute and then you can flip your pancakes for another 10 second.

You can season your pancakes with a teaspoon of Philadelphia cheese, a piece of smoked salmon and a sprinkling of chives and pepper.
