100 gr butter
200 gr almond with skin
10 gr ammonia for desserts
1 grated lemon

Cantucci with almonds are typical biscuits of Tuscan cuisine. It is tradition to soak the on Vin Santo …. but they are also delicious with a hot tea cup in front of a fireplace!

Preheat your oven at 170 degrees ( fan forced).
Break eggs into a bowl, add sugar, softened butter, grated lemon and ammonia for desserts.
Stir and add flour slowly. When you have added half flour, you can add almonds into the dough and continue to knead with your hands.
Continue to add the remaining flour, mixing with your hands on a bench.
When you have used all flour and the dough is homogeneous and elastic, work it in small "baguette". Place them on a baking tray, brush their surface with yolk egg and bake for 30 minutes.
Take the tray out of the oven, meanwhile the " baguettes" are still hot, with a knife you can cut them into small slice slightly diagonally.Place Cantucci in the tray and bake again for 10 minute.
This step makes them brown and more crispy.
Once ready, let your Cantucci with almonds cool and you are ready to taste!
