Preheat the oven to 18o C.
Beat the eggs with sugar in a planetary mixer.
When they are well whipped, add milk and infused olive oil (if you don't have the infused oil, you can use seed oil and grated orange peel).
In the meantime, sift all the floury ingredients (flour, cinnamon, ginger, vanilla,Pane Angeli yeast) and pour them into the dough.
When you have reached a homogeneous consistency, with the help of a teaspoon fill trees halfway.
Bake at 180 degrees for about 20 minutes.
Let them cool on a wire rack.
While melting the white chocolate. Pour a small amount of melted chocolate on each small trees and decorate with cranberries.
