2 cloves garlic
150 gr guanciale
4/5 spoons olive oil
rosemary
4 cherry tomatoes
200 gr That's Amore smoked provola
Parmigiano Reggiano
300 gr Pasta corta Garofalo

The recipe of Pasta Provola e Patate come from Napoli and it is one of my favourite plate during winter time! It is a perfect comfort food, soft, warm and tasty!

Do not forget that it must be “AZZECCATA”, in napoletano. means sticky!

Heat the olive oil in a casserole over medium heat and cook the chopped onions, garlic for 2 minutes. Add potatoes cut into little cubes and rosemary, cook for 3 -4 minutes.
Stir in the guanciale, cut into little stripes, and cook for 4-5 minutes over medium heat.
Meanwhile cook pasta in salted and boiling water.
Add some pasta water into the casserole when you need for cooking the potatoes.
When pasta is half cooked, drain pasta and pour it into the casserole with the potatoes. Stir until pasta is cooked, adding some pasta water.
Add grated parmigiano and pepper stirring regularly.
At the end add smoked provola, stir well....... this pasta have to be sticky! DEVE ESSERE BELLA AZZECCATA!
Serve hot with a glass of red wine!
