Ingredients

Adjust Servings:
250 gr rice
2 eggs
1 yolk
100 gr sugar
1 orange
1 lemon
4 spoons plain flour
1/2 bag dessert yeast Pane Angeli
1/2 teaspoon cinnamon
1 pinch fresh yeast
1 finger milk
1 litre sunflowers oil
sugar and icing sugar

Every year it was a competition for those who ate more Frittelle… my grandma Elena always made triple portion of the recipe…. she fried frittelle for hours!

The Christmas when I waited for my uncles from Rome, when it was cold and the Christmas tree was of gift because sea were many…. now many have become angels and I want to remember them with a smile full of sugar!

Cook rice in boiling water. Drain and let it cool down.
In a little bowl bit eggs with sugar, add lemon and orange grated zest and juice.
Mix everything with cold rice. Add flour, Paneangeli yeast, cinnamon and fresh yeast melted in a finger of milk.
Mix well with a spoon until well combined.
Cover and let it rise for two hours.
Fry your Frittelle di Riso pouring the dough with a spoon in sunflowers oil at 180 degrees.
When Frittelle become gold they are ready.
Put your Frittelle on paper towel and sprinkle them with sugar.
