450 g shortcrust pastry
500 g ricotta
1 egg
2 ( 2 grated zest, 1 Juice) organic lemons
5 spoons sugar
1 small bag vanilla powder

Crostata with ricotta and lemons

My nonna often made this delicious crostata…. and I was crazy about it!

So I made it for some lovely ladies who came to my place for a pasta masterclass… it had the same effect!

Roll out your pastry on a floured bench.
Pour ricotta in a bowl and smash with a fork.
Add sugar and mix well.
After you can add egg, grated zest of 2 lemons, vanillina powder and juice of one lemon. Whenever you add an ingredient, mix well.
Place the pastry into a round tart tin, previously grease and flour.
Make small holes in the base of pastry with a fork and pour in the seasoned ricotta. Level ricotta with a spatula.
Make some decorations and bake in the preheated ove at 180 * for 45/ 50 minutes.
Let it cool down.
Sprinkle with icing sugar and serve with a cup of coffee or tea.
