10 gr fresh yeast
25 gr sugar
1 egg
70 gr milk
20 gr butter
1 liter canola oil
for garnish
cinnamon
caster sugar
nutella
jam

Everyone will go crazy with Bombolini,  soft,  tasty and tiny balls!

Blend sugar and cinnamon.
Mix in a stand mixer flour, sugar and butter for 3 minutes. Add egg and work for 5 minutes.
Melt fresh yeast in a cup with milk. Pour the mixture into the stand mixer with the other ingredients. Work everything for 5 minutes.
Pour the dough on a floured bench. Leave it to rest for 30 minutes.
With oiled hands, divide your dough into 15 parts of 30 gr each and make small balls
Leave them to rise for about 3 hours in a oiled tray.
Bring the oil to 170 degrees and start frying your Bombolini. When they are golden brown, drain them with a small colander and dip your bombolini into the sugar, previously blended with cinnamon... if you love cinnamon like me!
Make a small hole on top of each bombolino, so you can stuff them with Nutella, jam or custard.... are already delicious plain!
