Biscotti Pasta di Mandorle

These biscuits are the fragrances of Sunday, the scent of Grandma !

Every Sunday  my Grandma used to do some of these soft pillows!

It was unthinkable to throw away food, so with the eggs white, which she didn’t use to make the pasta dough, she prepared Biscotti Pasta di Mandorle very quickly.

Preheat the oven to 180 degrees.
Line a try with baking paper.
Pour all the ingredients in a stand mixer and work until to reach a firm dough.
Pour icing sugar in a plate.
Remove pieces of walnut sized (or slightly larger)from the mixture and work them with your hands to obtain irregular balls.
Pass the balls in the icing sugar and transfer them to the try.
Bake for 10 - 12 minutes.

A clarification, Annapaola, please. Does 1 spoon of honey mean 1 teaspoon or 1 tablespoon? Valeria
