The days are getting longer, the air is starting to get warmer, despite wind, the plants are in bloom and the green of the meadows is getting more and more bright… I want to welcome spring with this simple but taste Avocado Pasta!

While pasta is cooking, cut the avocados into cubes, season it in bowl with extra virgin olive oil, fresh basil leaves, salt and pepper.
Drain pasta and add it to the avocado. Mix well with a wood spoon, so with hot pasta everything amalgamates and takes flavour.
Add some grated parmigiano and if you have some crushed pistachios.
Lunch is served!
