I make Spaeztle at least once a month because it is really easy, fast and  perfect  for making kids happy!

During Christmas I love to try typically recipe of northern Italy because they remind me of the magic of those enchanted places. A plate of buttery  Spaeztle are my favorite meal after a long skiing!

Spaeztle are small gnocchi made from soft flour, eggs and water, a preparation as simple as it is very popular in Tyrol but with a name that reveals its German origins.

Making Spaeztle

Pour eggs in a bowl and beat well. Add nutmeg, salt and mix well. Add slowly some flour and mix. Add alternately flour and water, mix until smooth and thick. Let the dough rest for 15 minutes.
Bring salted water to a boil in a large pot. To form the spaeztle, hold a large holed colander or a Spaetzlehobel, a grater formed by a pitted base on which flows a container containing the dough that is slid forward and indented dropping the drops directly into the water boiling that re-emerge on the surface in a few moments.

Easy buttery sauce

Drain the spaeztle and pour them into a big pan with melted butter and sage.
Serve with grated Parmigiano Reggiano and pepper.
