  Have you never melted a meringue in your espresso?

Meringue are not complicated to make but you need patience for cooking and precision in weighing the ingredients. Always weigh egg whites first, them add the same amount of icing sugar and same white sugar.

You can keep your meringues neutral or colored, just a few drops of food colouring, or some cold coffee!

Preheat the oven to 90 degrees. Line with baking paper 2 trays.
Sift two sugar together. Put the egg whites, sugars and vanilla in a bowl. If you like, add half cup of cold coffee.
Beat the egg whites until stiff. With a Kitchen Aid it took me 7 minutes.
Transfer the meringue into a pastry bag to which you will have placed a nozzle with a diameter of 1 cm. Squeeze small meringues 2 cm high on your tray. You can put them closed in order, they do not swell.
Bake them for 3 hours and 30 minutes.
Let them cool completely before to remove them from the paper.
Place them in jars, they will keep for more than a week.
