10 spoons sugar
150 gr plain flour
150 gr wholemeal flour
2 tea spoons dessert yeast
6 red plums
2 spoons sugar
a splash lemon juice

Imagine a warm summer evening , a dinner in the garden with friends, lighted torches and candles and a starry sky!

A slice of my red plums tart with a spoon of vanilla ice cream is a a perfect the end !

Red plums

Wash and cut red plums. Place them in a bowl, add sugar and lemon. Let them marinate.


The base

Preheat the oven 170.
Place eggs, sugar and oil in a stand mixer and works for 5 minutes until the sugar melted.
Add flour and desert yeast. Process again until the mixture is starting to come together in a dough.
Transfer the dough to a lightly floured surface and lightly knead until it is smooth.
On a lightly floured surface roll the dough out to 4 mm thick. Transfer the pastry to a sheet of baking paper and place in a round baking dish.
Pour the red plums filling into the centre of the dough, leaving a 3 cm border. Fold the pastry border up and over the filling.
Bake for 30 - 35 minutes or until is golden.
Leave to cool on the dish for 20 minutes. When completely cool, dust icing sugar.
Slice and serve with a spoon of vanilla ice cream!
Ps: with the remaining dough ....make some Biscotti!
