350 gr flour
1/2 teaspoon cinnamon
2 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon bicarbonate
60 gr honey
100 gr sugar
1 egg
1 yolk egg

For us the smell of these biscuits is the true smell of Christmas ! My kids help me making gingerbread with great enthusiasm, singing Christmas song … because these will be the gingerbread for Santa Claus!




Line a baking tray with baking power.
Place flour, ginger, cinnamon, bicarbonate of soda, nutmeg in a stand mixer and stir the ingredients until they are thoroughly mixed. Add cold butter and work until the mixture resembles fine breadcrumbs. Add sugar and pulse again. In a small bowl, beat together egg, yolk egg and honey with a fork then add this to the breadcrumb mixture.
Process the mixture in a stand mixer until it comes together in a ball. Lift the ball of dough out, wrap it in cling film and chill fir 30 minutes in the fridge.
Take off the dough from the fridge and preheat the oven to 170.
Roll out the chilled dough on a lightly floured surface, to 5/6 mm thickness, then using yours cutters, cut out the shapes. Re-roll the leftover dough and cut more biscuits.
Place the biscuits on the tray
