Cut your zucchini into long and thin slices. Roast them.
Cut a slice of bread and toast it.
Spread Stracciatella cheese on your slice, add roasted zucchini, then anchovies.
Place mint leaves and season with generous extra virgin olive oil, salt and pepper!
