These potato Christmas trees can be a delicious appetizer or side dish… served hot with meat or fish they are perfect and fragrant!

Boil potatoes for about 25 minutes with the skin on.
Remove the skin and crush them when they are still warm.
Let them cool in a bowl then add egg yolks, pesto, chopped fresh basil and nutmeg.
Mix everything well and add grated Parmesan, mix again.
Taste the dough and decide whether to add a pinch of salt.
Transfer your dough into a piping bag with the nozzle star. My nozzle star wasn't big enough so I did it without it and the result wasn't the best.
Now make 8 potato saplings on a tray with baking paper.
Bake in a preheat oven at 180 degrees for 20 minutes.
Meanwhile, cut cheese with a star cutter and insert the toothpick into the start.
When the saplings are ready, arrange them on a tray and stick the toothpick with the star in each sapling and your Christmas appetizer or side dish is ready!
